“Fish Finger” Custard Cookies
Ingredients:
1 cup butter, softened (2 sticks)
½ cup powdered sugar
1 teaspoon vanilla extract
1¾ cups flour
½ cup custard powder“Breading”:
2/3 cup grahamcracker crumbs
1 tbsp sugar
2 tbsp melted butterDirections:
Preheat oven to 350°. In an electric mixer, beat together butter, powdered sugar, and vanilla till well mixed (fluffy). Then slowly add in the flour and custard powder till soft dough forms.
In a separate bowl, mix together the melted butter, graham cracker crumbs, and sugar till it has the consistency of wet sand.
Roll cookie dough into small log forms then roll into the logs into the ‘breading’ mixture. **tip! To make the crumbs stick easier what I did was dampened my hands with water while rolling the dough into logs, this made the dough just wet enough to help it stick)**
Placed ‘breaded’ dough onto greased cookie sheets and bake for 15-17 mins (or till lightly brown on edges). The cookies will be soft to the touch, this is normal!! They will harden as they cool! Let cookies cool on cookie sheet for 2 mins then transfer to a cooling rack.
